Zarda
Ingredients:
Sela rice 3 cups
Fresh milk 1 cup
Cloves 4
Pistachios (finely cut) 10
Almonds (finely cut) 10
Green cardamoms 8
Yellow food color ½ tsp
Sugar 2 ½ cups
Water as required
Compote to taste
Clarified butter 1 cup
Method:
Soak rice in water for 8 hours.
Boil water in a pot; add ½ cloves, ½ cardamoms and rice.
Strain and set aside.
Add food color, milk, almonds, pistachios, sugar and compote in rice.
Heat clarified butter in a pot; add remaining cloves and cardamoms; when they give off aroma; add rice and stir with wooden spoon.
Cover pot with lid and leave on dum.
